Cati is an anomaly in the world of natural wine. Not only is she one of two female winemakers on the island of Mallorca, she is also just one of three natural winemakers in a place where winemaking is difficult. While many use the international varieties like Cabernet and Syrah to make their wines noticed by the world, Cati made a firm decision to use indigenous varieties that are lighter in style, reflecting the terroir of Mallorca. It shows just how focused Cati is as she not only is a single mother with a winery to run, additionally she flew back and forth from Barcelona to Mallorca daily while training as a somm. Her work ethic is unparalleled.
This is a blend of indigenous grapes from outside the family’s bodega. The fruit is aged both in amphora and stainless, as well as seeing a couple hours of skin contact. The wine is done completely naturally.
